The upswept tip and rounded belly of this knife are so iconic that the German style chef knife is the first thing that comes to most people’s mind when hearing the term “chef knife”.
Besides being the perfect knife for rocking cuts, it also features a sturdier tip than most, which makes it an excellent choice for cooks who fillet fish or do small-game butchery and don’t plan on getting a specialized knife for each task.
The B.K. Forge version combines German style blade shape with Japanese style wa handle.
Blade length: ~180\210\240mm
Blade height: ~50mm (edge to spine)
Blade thickness: ~2.5mm (above the heel)
Edge hardness (stainless): 60±1 HRC
Edge hardness (carbon): 61±1 HRC
Please note, traditional western knives are made thicker and softer than Japanese knives, if you wish to purchase a knife that aligns with those standards (~3mm thickness and ~55HRC), simply make a note of it in your order for no extra cost.
