The upswept tip and rounded belly of this knife are so iconic that the German style chef knife is the first thing that comes to most people’s mind when hearing the term “chef knife”.
Besides being the perfect knife for rocking cuts, it also features a sturdier tip than most, which makes it an excellent choice for cooks who fillet fish or do small-game butchery and don’t plan on getting a specialized knife for each task.

The B.K. Forge version combines German style blade shape with Japanese style wa handle.
Western knives feature softer steel (56±1 HRC) and more obtuse edge than Japanese knives, making for a tougher knife that is not quite as sharp. If you would like to purchase a version of this knife that is hardened and sharpened to the Japanese standard (61±1 HRC for carbon and 60±1 HRC for stainless), add your request as a note at checkout for no extra cost.
