A new addition to the Japanese chef knives pantheon, the kamagata was originally used for rubber cutting in the shoe industry until chefs caught wind of them and demanded to be let in on the design.
The kamagata is short from tip to handle, tall from edge to spine and has a flat profile, making it a joy to chop any small vegetables. Cucumbers, carrots, shallots, you will never want to stop chopping.
A great gift for the chef who has everything.

Blade thickness: ~2.5mm (above the heel)
Edge hardness (stainless): 60±1 HRC
Edge hardness (carbon): 61±1 HRC
